Fried Bananas Kluay Tod Thailand

Battered banana slices that is deepfried. Children really like them (most chidren).
Ingredients:
1 pound of bananas, about 6 to 8. traditionally small asian bananas are used. but you can use any banana you choose.
3/4 cup rice flour.
1/4 cup tapioca flour.
1/2 cup tsp baking soda.
2 tbsp sugar.
1 tsp salt
1/2 cup shredded coconut.
1 cup water
4 cups oil for deep frying
Directions:
1. Peel and slice each banana lengthwise into four slices.
2. In a mixing bowlk combine rice flour, tapioca flour, sugar, salt, coconut andd baking soda.
3. Add water a little at a time.
4. Mix well to form a thick batter.
5. Heat the oil in a deep fryer or wok to 375°F.
6. Dip each piece of banana into the batter to completely coat,
7. Deep fry until golden brown.
8. Remolve from oil and drain on paper towels.
9. Serve as a snack or with Thai ice cream.
