Can't get much better than homemade fried apple pies. If you don't like apples for the filling any of your favorite fruit will do.
Ingredients:
*first step
5 medium apples of your choice, they need to have a little tartness to them to make them just right.
1/3 cup of sugar
1/2 tsp. of cinnamon
1/2 tsp. of nutmeg...it makes a world of difference
1 stick of butter, i use parkay
*second part
1 can of butter-me-not biscuits
rolling pin
a fork
Directions:
1. From the First Step, put the butter in a large cast iron skillet and put on medium low heat.
2. Peel and core the apples and slice them.
3. Once the butter has melted in the skillet add the apples and cover the tops with sugar, cinnamon, and nutmeg. Cover and let cook about 10 minutes and start turning the apples, I like to start smashing them at this point. Once they are tender enough and the apples have soaked up the butter, remove from heat and place the apples in a small bowl and set to the side.
4. Take another large cast iron skillet and place on medium low heat and put about 2 Tbsp. of canola oil in and let it heat while you prepare the pies.
5. From the second step, take one biscuit at a time and use rolling pin to flatten, place a large tablespoon of the apples in the center of the biscuit and then fold over and take the fork to press around the edges, continue until you have used all biscuits. Place the pies in the skillet and fry for at least 4 minutes on each side, you may have to adjust the heat if they get brown too fast.
6. When you take them out of the skillet onto a plate, sprinkle the pies with a little white sugar.
7. This is an old recipe, I hope you enjoy them.
