Chicken Chilli
Ingredients:
15 oz black beans, rinsed
15 oz red beans, rinsed
1 tsp hot sauce
1/2 cup ketchup
1 tsp onion powder
1 tsp garlic powder
1 tsp season salt
1 tsp cumin
1/4 cup chili powder
1 tbsp brown sugar
1 yellow onion, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
1 red bell pepper, diced
35 oz can tomatoes, whole
10 oz tomato soup
1 lb ground chicken breast
4 cloves garlic
2 dash black pepper
Directions:
1. Thoroughly coat large frying pan with cooking spray.
2. For chunky chilli add onion, peppers, garlic and meat at same time.
3. (For less chunky sautee peppers and onions until tender before adding meat and garlic. If you choose to do this, you may need to add a few tablespoons of water to your veggies to keep them from burning as they cook down)
4. Sprinkle garlic powder, onion powder, cumin over meat and brown. Cover to retain moisture.
5. Once meat has browned add beans, tomatoes, tomato soup, ketchup, hot sauce, chili powder and brown sugar. Simmer until beans are tender.
6. This recipe gave me approx. 8-9 1 cup servings. I left the nutritional info for the entire recipe so you can determine the nutrition facts for whichever size serving you have.
7. Also added 1/2 tbsp of bacon drippings to the entire recipe. It helps to get rid of that wantingness you feel when something is very low in fat. Adding 1/2 tbsp of olive oil would help as well. Bacon adds the smokey flavor though. The bacon drippings yield an additional 7.5 Calories .9g Fat 4.75mg Sodium per serving**
