Fricassee of Brussels Sprouts and Pearl Onions in Pesto Sauce

Ingredients:
1 lb brussels sprout, trimed and halved
4 tablespoons butter
1 cup white pearl onion, peeled
1 large carrot, cut in 1-inch chunks
2 tablespoons prepared pesto sauce
Directions:
1. In a large saucepan filled with water, boil Brussels sprouts for 5 minutes. Drain.
2. In a large saucepan, melt butter over medium heat. Add carrots and onion and cook, stirring, until onions turn golden, 4-5 minutes.
3. Reduce heat to low and add Brussels sprouts.
4. Cover and cook, stirring occasionally to prevent vegetables from sticking, until sprouts are very soft, 15-20 minutes.
5. Add pesto sauce and stir to blend. Serve hot.
