Fresh Vegetable Soup

A nice, light vegetable soup. Super filling and easy to make!
Ingredients:
1/2 chopped red onion
1/2 chopped red pepper
1/2 cup chopped tomato
1/2 cup chopped mushroom
2 1/2 cups water
1 1/2 oz. spinach
1 tablespoon oregano
3 tablespoons mint
1 tablespoon cilantro
2 tablespoons capers
1 salt
1 ground pepper
Directions:
1. Sauté onions, pepper, and mushroom with a few sprigs of the mint
2. Add water, herbs, rest of mint, capers, and salt and pepper to taste.
3. Bring to a boil and then turn down heat and let simmer
4. Add spinach, let cook for a bit longer
5. Enjoy!
