Fresh Vanilla Custard

This is a wonderful topping and just perfect to my Mini Christmas Puddings Recipe.
Ingredients:
1 pint full-fat milk
1 cup single cream
4 tsp vanilla bean paste or vanilla extract
2 strips of lemon rind
6 large egg yolks
3 level tbsp sugar
4 level tsp cornflour
Directions:
1. Pour the milk and cream into a pan and add the vanilla and lemon rind. Bring to boil, then turn off the heat immediately and leave the mix to cool for 15 min.
2. In a bowl, whisk together the egg yolks, sugar and cornflour. Gradually whisk in the cooled milk mix, then put the bowl oven a pan of simmering water, making sure the bottom of the bowl doesn't touch the water.
3. Heat gently for 10 min, stirring continuously until the mix thickens and coats the back of a spoon easily.
4. Pour into a jug and serve immediately.
