Fresh Tomato Sauce

A delicious tomato sauce. Easy to make and will keep for days in the fridge.
Ingredients:
3 tablespoons olive oil
2 onions, finely chopped
1 stick celery
10 tomatoes, peeled and chopped
2 garlic cloves, finely chopped
2 tablespoons tomato paste
1 teaspoon brown sugar
3 tablespoons red wine
salt and black pepper
Directions:
1. Heat the oil in a frying pan over medium heat. Add the onion and celery, and gently fry for about 7 minutes until soft.
2. Stir in the remaining ingredients and season to taste. Bring to the boil, then lower the heat and simmer for 25-30 minutes until reduced and thickened.
