Ingredients:
4 large ripe tomatoes, seeded and cut into 1/2 inch dice
1/4 to 1/2 cup sliced scallions or to taste
1 to 2 cloves minced garlic
1 to 2 small pickled or fresh jalapeno peppers
olive oil to taste
red wine vinegar to taste
salt
Directions:
1. Combine all of the ingredients and season to taste with salt. Transfer to a jar. Will keep in the fridge for a week.
