Ingredients:
3 medium tomatoes, cubed
2 celery ribs, chopped
2 carrots, chopped
1 small cucumber, chopped
1/2 cup parsley, chopped
1/2 cup canned chick-peas, drained and rinsed
salt, to taste
black pepper, to taste
1 lemon, juiced
1 tablespoon extra virgin olive oil
Directions:
1. Mix all ingredients together and let sit in refrigerator for 1 hour.
