Fresh Tomato Olive Sauce

adapted from bon appetit, this is great for using up your garden's bounty. this is wonderful over pasta or with fish, chicken, or beef, and can be used to top bruschetta
Ingredients:
1 1/2 lbs plum tomatoes, chopped
12 kalamata olives, pitted and sliced
1/2 cup extra virgin olive oil
1/2 cup roasted red pepper, sliced (from a jar)
1/4 cup red onion, chopped
3 garlic cloves, minced
3 tablespoons capers, rinsed and chopped
2 tablespoons lemon juice
1/2 lemon, zest of
2 tablespoons fresh parsley, chopped
1 tablespoon fresh oregano, chopped
3 tablespoons fresh basil, chiffonade
1/2 teaspoon dried red pepper
salt and pepper
Directions:
1. combine all ingredients in a bowl and let it sit at room temperature 1-2 hrs for flavors to blend.
