14 year-old DS brought home 19 orate (porgys) that he'd caught with his cousin. So proud! But they're a plain, bony white fish that need some ommph. I poached them in a court boullion, boned them :( and served them with the following garnish, and Perfect Microwave Rice with some cheese stirred in. It made for a lovely summer meal. Now if he'll just put his fishing pole away for a few days...
Ingredients:
3 tomatoes, ripe, about 1 lb., finely chopped
3 garlic cloves, minced
10 basil leaves, torn into tiny bits
1 tablespoon olive oil
1 teaspoon old bay seasoning
Directions:
1. Combine all ingredients gently.
2. Let sit for an hour to meld flavors, if you have time.
3. Serve cold or room temperature.
4. (P.S. Next day I tossed leftover cold garnish with hot pasta and a splash of olive oil - yummy).
