This recipe goes with Black Bean-and-Goat Cheese Tortilla Stacks
Ingredients:
1/2 cup fresh corn kernels (about 1 ear)
1 1/4 cups chopped tomato
1/2 cup chopped fresh cilantro
1/4 cup chopped red onion
1/4 cup chopped green onions
1/4 cup fresh lemon juice
1 teaspoon hot pepper sauce
1/2 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground cumin
Directions:
1. Steam corn, covered, 2 minutes, and cool. Combine corn and remaining ingredients in a large bowl.
2. Note: The salsa can be made a day in advance. Cover and chill.
