This is a light crispy salsa made with watermelon instead of tomatoes. Even the kids that won't eat freah tomatoes will LOVE It! A summer favorite at our house.
Ingredients:
3 cups seedless watermelon, chopped in small pieces
1/2 medium onion, chopped (purple or white)
1/2 chopped bell pepper (green or yellow)
1 tablespoon seeded and chopped fresh jalapeno pepper
2 tablespoons chopped cilantro leaves
2 tablespoons lime juice
1 teaspoon vegetable oil
Directions:
1. Gently mix all ingredients together in a medium bowl. Cover and refrigerate 1 hour to allow flavors to blend together. ENJOY.
