Fresh Spring Rolls

This comes from the WSU extension office. Some of the amounts aren't given so mine are in parentheses. These are very good and can be made without meat. Try other veggies and different herbs like mint or cilantro.
Ingredients:
1 (12 ounce) package rice noodles
16 rice paper sheets
2 cups warm broth or 2 cups water, in shallow bowl
16 slices lunch meat (turkey or beef)
2 cups cleaned sliced shrimp, cooked
1 1/2 cups shredded carrots
2 cups steamed bean sprouts
2 cups fresh basil leaves
Directions:
1. Cook rice noodles by package directions and set aside.
2. Lay sliced meat, shrimp, carrots, sprouts and leaves on plate in a buffet style.
3. Take one wrapper and gently submerge into warm liquid for 1/2 minute to soften.
4. Put a small amount of noodle and other items on the wrapper and fold. Do not overfill.
5. Dip into peanut sauce or hot sauce.
