This is a refreshing summer salsa made with fresh tomatoes. It can also be done with canned tomatoes too but it just doesn't compare to the fresh stuff. My mom uses to make this salsa when I was a kid it was easy because we always had an awesome garden. .This is best served before it is refrigerated but it is good leftover too. Serve with corn chips or even good with garlic bread.
Ingredients:
5 firm ripe tomatoes
1 onion, minced any kind
1 can chopped black olives
2 minced garlic cloves
2 bell peppers, chopped different colors are pretty
1/4 cup vinegar
1/3 cup oil
1 teaspoon onion powder
1 teaspoon garlic salt
salt and pepper
Directions:
1. Dice tomatoes, onions, olives, peppers and mince garlic place in a medium bowl.
2. Add oil, vinegar and seasonings and mix well.
3. Add more oil , vinegar and seasonings to your taste.
