Fresh Roasted Tomato Sauce

I was standing in the grocery listening to this woman talking about how she roasts her tomatoes before making them into sauce. I thought that was a great idea so I tried it. It was so easy and I was able to sneak a few extra veggies into it for the kids. I used half Romas and half Better Boys. For thicker sauce use all Romas.
Ingredients:
15 tomatoes, cut into halves (do not peel)
pepper, to taste
garlic, minced, to taste
italian seasoning, to taste
kosher salt, to taste
2 tablespoons celery
2 tablespoons onions
2 tablespoons carrots
1 tablespoon sugar
1 tablespoon olive oil
Directions:
1. Put tomatoes, cut side up on cookie sheet, sprinkling with pepper, garlic, Italian seasoning and kosher salt.
2. Bake at 350F for 45 minutes.
3. Place celery, onion, carrots, sugar and olive oil in food processor.
4. Process until smooth.
5. Add tomatoes and process until mixture is well blended.
