Fresh Pea Soup

20 Minute Meals - This comes from a menu called “Taste of Spring Sunday Lunch”. Also on the menu is roasted lamb salad and lemon gelato.
Ingredients:
4 cups water or 4 cups broth
1 cup fresh peas, shelled
1/2 cup soft garlic and herb-flavored cheese
salt
plain yogurt (thinned with milk for drizzling)
fresh mint sprig (to garnish)
Directions:
1. Heat water in small saucepan to boiling.
2. Add peas and cook until just tender, 2-3 minutes.
3. Carefully puree soup and cheese in blender.
4. Pass through a food mill or sieve into a bowl. Season to taste with salt if needed.
5. Ladle into bowls, drizzle with yogurt and garnish with mint.
