I wish I could think of a catchier name, because I think if you try this recipe you will love it! Compared to other recipes I looked at this one is low in fat and sugar! You can use any combination of fresh summer vegetables (equal to about 7 cups). I listed my favorites. I made this in a 7 cup Rubbermaid container.
Ingredients:
2 small zucchini
2 small yellow squash
1 small vidalia onion
1/2 small green pepper
1/2 small red pepper
1 tomato
1/2 cucumber
1/2 cup broccoli floret
1/2 cup canola oil
2 tablespoons white vinegar
1/2 teaspoon dried basil
1/2 teaspoon dried italian seasoning
1 tablespoon sugar
1/2 teaspoon celery salt
1 dash pepper
Directions:
1. Mix together marinade ingredients.
2. Chop vegetables in a small dice. I like little squares.
3. Pour over vegetables.
4. Stir until vegetables are well covered.
5. Marinate overnight. Stir or shake a couple of times.
