Fresh Mango Salsa

A favorite snack in my house is chips & salsa, and my husband & I had to stop ourselves from finishing this entire bowl in one sitting. I love the combination of sweet with salty, so mango salsa & chips is a perfect marriage of the two.
Ingredients:
3 roma tomatoes
1 container grape tomatoes
1 small white onion
1 small clove garlic
1/2 orange bell pepper
2 ripe mangoes
1 large avocado
1 can black beans, drained
juice of 1 lemon
salt & freshly ground black pepper
Directions:
1. Set aside a large bowl. Dice the roma and grape tomatoes, keeping the sizes of the pieces consistent, and add to bowl. Mince the garlic, and dice the onion & bell pepper in the same manner as tomatoes; add to bowl. Peel the mangoes with a vegetable peeler, dice. Add well-drained black beans to bowl & lightly mix. Add diced avocado last, & squeeze juice of 1 lemon over top. Mix gently but thoroughly, adding salt & pepper to taste. Serve with homemade tortilla chips.
