Ingredients:
3 cups mangoes, chopped
2 tomatoes, chopped
1/2 red onion, chopped
2 cucumbers, chopped (seed if you want)
1 1/2 cups corn, fresh best
1/2 cup basil, fresh shredded
1/2 cup olive oil
1/4 cup rice vinegar
2 tablespoons lime juice
1 teaspoon garlic, chopped
1/2 teaspoon salt
1/2 teaspoon pepper
1 bunch watercress, torn
1 head bibb lettuce, torn
Directions:
1. Combine all but watercress and lettuce in a large bowl, tossing to coat all.
2. Cover and chill 2 hours.
3. Serve over watercress and lettuce.
