My daughter brought this recipe back from Hawaii. It is delicious. Makes a nice summer dessert.
Ingredients:
crust
2 cups sifted flour
1 cup butter or margarine
1/2 cup walnuts, chooped
cream cheese filling
1 package cream cheese (8oz.)
1 teaspoon vanilla
1 container cool whip (8-oz)
topping
2 envelops knox gelatin
1 cup cold water
1 cup boiling water
1 cup sugar
1/4 teaspoon salt
4 tablespoons lemon juice
yellow food color, 2-3 drops
5 cups firm, ripe mangoes,chopped
Directions:
1. Crust:
2. Cut butter into flour until mixture clings together. Add nuts. Press into 9x13-inch pan. Bake at 350 degrees for 20-25 minutes. Cool.
3. Cream Cheese Filling:
4. Beat cream cheese ubtil soft: add vanilla. Fold into Cool Whip. Pour over crust. Refrigerate.
5. Topping:
6. Sprinkle gelatinover 1 cup cold water to soften. Add boiling water, sugar,salt, and stir until thoroughly dissolved. Add lemon juice and food coloring; stir to combine. Cool. Add mangoes and chill until gelatin begins to mold. Pour over cream-cheese filling. Refrigerate until firm.
