Fresh Mango Jalapeno Salsa

I tried to re-create a mango salsa we ate at a local restaurant, and I came pretty close. We had it with grilled fish last night, and tonight we ate the leftovers with tortilla chips. You can heat it up to whatever degree you like by adding more jalapeno - 2 small jalapenos give it just a small bite , so add more if you like a big bite! Read more ! It's good on grilled chicken, fish, pork...just about any grilled meat.
Ingredients:
1 small ripe mango
1/2 red pepper
1/2 medium sweet onion
2 small jalapeno peppers, seeds discarded
about 2 tablespoons cilantro, to your liking (i love the stuff, so i use more)
drizzle of olive oil
1/4 teaspoon ground cumin (maybe less to start - it depends on how much you like that flavor)
1/4 teaspoon salt
1 or 2 shakes garlic powder (not garlic salt)
4 or 5 grinds of fresh pepper
Directions:
1. Chop the fruit and veggies to small dices and toss together.
2. Drizzle just a teaspoon or so of olive oil over the veggies.
3. Add seasonings and mix it all together well. This is one of those dishes you have to taste test and adjust seasonings to your taste.
4. As most salsas, the flavor improves and intensifies as it sits, so try to make it at least a couple hours in advance.
5. Serve with grilled meats, as a side with tortilla chips, or mixed into a bit of white rice…whatever ways you can think of to enjoy this fresh salsa.
6. Store leftovers in the refrigerator - will keep for 3 or 4 days.
