Fresh Harvest Apple Squares

One of our Fall dessert favourites here at home. My mom is famous at our old elementary school for these... my Home Ec teacher would steal them from the bake sale tables!
Ingredients:
1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 tsp baking soda
1/4 tsp salt
1 cup packed dark brown sugar
1 1/2 cups quick-cooking rolled oats (not instant)
1/2 cup cold butter or stick margarine
3 cups thinly sliced granny smith apples
1 tsp cinnamon
2 tsp lemon juice
Directions:
1. Preheat oven to 375F.
2. Combine flours through oats in a large bowl.
3. Cut butter into the dry ingredients until mixture is crumbly. Add a little apple juice or water if required.
4. Press 1/2 the crumble into the bottom of a thoroughly greased 9 pan.
5. Combine remaining ingredients and toss to coat.
6. Pour apples over bottom crust and crumble remaining oat mixture overtop evenly.
7. Pat down.
8. Bake 40-45 minutes or until golden brown.
9. Let cool thoroughly before cutting and serving.
