Sofrito, of Hispanic origin, is a combination of fresh bell peppers, tomatoes, herbs etc,vegetables prepared differently in each country . Some sofrito are cooked and others remain fresh, with consistencies from paste like to relish styles. Read more . Sofrito is a great condiment/ side dish. For instance, I use it as a garden relish and place a few Tbs in my sandwich wraps, place it in soup recipes, a topping for rice, serve it along with chicken dishes etc. It freezes well and it is a great recipe to use up my excess garden green bell peppers!
Ingredients:
3 large green bell peppers
3 large red bell peppers
1 large meaty tomato
1 med sweet onion
1 small bunch of fresh parsley
1 small bunch of fresh cilantro
2 garlic cloves or more to taste
1- 2 tsp ground cumin or to taste
kosher salt to taste
fresh grated black pepper to taste
chipolte chili powder to taste
1/4 cup olive oil
Directions:
1. Using a food processor, chop vegetables separately.
2. Chop up the onion into bite size small pieces
3. Chop garlic finely
4. Chop seeded cut up bell peppers like the onions
5. Chop up the parsley and cilantro
6. Chop up the cut up seeded tomato
7. Mix all together in a large bowl
8. Stir in some olive oil and season to taste.
9. Chill well.
10. Note: I don't saute this recipe , I use it fresh
11. When serving, use a slotted spoon to dish out the sofrito because some liquid does remain in the bottom of the bowl or container
12. This freezes well
