Lovely refreshing salsa, great with fish or any meat.chill time is cook time. from Company's comming, cooking for diabetics. Diabetic choices = 1 fruit and veggie
Ingredients:
1 medium ripe mango
1 large ripe papaya
1/3 cup red onion, finely chopped
1 small red pepper, diced
1/3 cup lime juice, fresh is best
3/4 cup english cucumber, with peel,diced
1 tablespoon fresh cilantro or 1 tablespoon mint leaf, chopped
2/3 cup unsweetened applesauce
1 teaspoon sugar
1/4 teaspoon ground cinnamon
fresh mint (to garnish)
Directions:
1. Peel and dice mango and papaya with juice, into medium bowl.
2. Stir in next 8 ingredients.
3. Cover and chill for 1 hour to blend flavours.
4. Garnish with mint leaves if desired.
