This recipe came from my collection of catering recipes, when I used to cater many years ago. It's a great recipe for a brunch.
Ingredients:
1/2 large (20 lb.) watermelon
1 cantaloupe, peeled, seeded, large dice
1 pineapple, peeled, cored, large dice
3 apples, peeled, cored, large dice
1 lb. green seedless grapes
1 lb. red seedless grapes
2 pts. strawberries, hulled and halved
1 11 oz. can mandarin orange segments, drained
1 qt. strawberry yogurt
Directions:
1. Carve the watermelon to resemble a bowl. Remove the flesh and cut into large dice.
2. In a very large bowl, combine fruit. Toss with strawberry yogurt.
3. Spoon into watermelon bowl.
4. Chill for at least 2 hours. Serve.
