Ingredients:

Directions:

  1. Add tomatoes and vinegar to a small bowl and set aside
  2. In a non stick pan, heat olive oil.
  3. Cook 3 cloves of garlic in 2 Tbs olive oil until golden brown, stirring constantly
  4. Add garlic and oil to tomatoes
  5. Slice loaf of French or Italian bread on a bias and place on oiled cookie sheet in a single layer;
  6. Bake at 350 for 5 minutes or less to lightly toast bread. The bread can also be toasted on a grill for a bit more flavor (this goes quickly so be careful not to burn your toast!)
  7. Immediately rub with a garlic clove and drizzle with extra virgin olive oil.
  8. Mix basil into tomato mixture
  9. Top each slice toast with a slice of fresh mozzarella and a heaping spoonful of tomato mixture.
  10. Serve immediately.
