FRESH ASPARAGUS CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Almond Estate in Grand Prairie, Texas in 1992.
Ingredients:
1-1/2 cups water
1-1/2 cups chicken stock
1 teaspoon salt
1 pound fresh asparagus
2 tablespoons butter
1 small white onion
3 cloves minced garlic
1 cup uncooked long grain rice
1/2 cup diced red bell pepper
1/2 cup grated parmesan cheese
Directions:
1. Mix all ingredients then pour into casserole dish and cover.
2. Bake at 400 for 20 minutes then stir bake 20 minutes longer.
