I keep fresh fruit and things on hand but the easiest and most enjoyable way to get them down the children with little to no waste is smoothies. Here is a good one I created. This has a texture to it my kids like a thick textured smoothie and this one meets their requirements.
Ingredients:
2 apples, cored and chopped
1 banana, peeled
1 cup coconut cream
1 -1 1/2 cup soymilk (plain)
2 tablespoons flax seed meal
2 tablespoons frozen apple juice concentrate
1 scoop vanilla, whey protien (optional)
1 teaspoon vanilla
water
ice cube
1 teaspoon lemon juice (optional)
Directions:
1. In a standard Oster type blender put all the ingredients except the water and ice into the blender.
2. Add enough water and ice to bring to 1-2 inches from the top. More ice means more ice crystals less means a smoother consistance. Try 4 cubes of ice at first and then if it is really hot try 6,.
3. Turn the blender on to liquifiy or Ice crush depending on your brand of blender, the highest settings.
4. Blend till smooth or desired consistancy. Leaving the inch or so from the top gives room to add more water or ice if you like.
5. If you have left overs simply add a teaspoon of lemon juice and put it into ice trays and freeze for later. We rarely have leftovers.
