Fresh Apples and brewed Tea make this cake something special.
Ingredients:
1 1/2 cups sugar
3/4 cup butter (softened)
2 eggs
2 1/2 cups flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
3/4 cup boiling water
2 tea bags
3 cups apples (diced)
1/4 cup raisins
1 tablespoon candied ginger (chopped)
1 cup nuts (chopped)
Directions:
1. Preheat oven to 350 degrees.
2. Steep tea in boiling water for 4 minutes.
3. Grease and flour loaf pan (10 x 5 x 2.75).
4. Cream sugar and butter.
5. Beat in eggs.
6. Sift dry ingredients together and add alternately with tea.
7. Fold in apples, raisins, nuts, and ginger.
8. Spread into prepared pan and bake 45-55 minutes or until toothpick comes out clean.
