Ingredients:
1 tablespoon extra-virgin olive oil
1 tablespoon cider vinegar
1/2 teaspoon salt
1 garlic clove, minced
2 beets
2 cups shredded red cabbage
Directions:
1. Combine first 4 ingredients in a small bowl; set aside.
2. Peel beets under running water to prevent hands from staining; shred beets.
3. Combine cabbage and beets in a bowl; add oil mixture, and toss. Serve immediately.
