French Toast With Smoked Salmon on Greens

The smoky flavour of smoked paprika is a perfect match with the taste of the smoked salmon. This makes a sit down appetizer or new brunch dish.
Ingredients:
1/2 loaf french bread, baguette
3 eggs
1/3 cup light cream
1 tablespoon fresh italian parsley, minced
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1 pinch pepper
1 tablespoon butter
12 cups mixed greens
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 (4 ounce) package thinly sliced smoked salmon
1/4 cup diced red onion
2 tablespoons capers
Directions:
1. Slice baguette on the diagonal into 1/2 inch thick slices to get 12 slices, set aside.
2. In a shallow dish, whisk together eggs, cream, parsley, paprika, half of the salt and pepper. Dip each slice into egg mixture, turning to coat will.
3. Melt half of the butter into a non stick skillet over medium high heat and pan fry the baguette slices for about 3 minutes turning once or twice or until golden. Repeat with remaining baguette slices.
4. In bowl, toss mixed greens with oil, lemon juice and remaining salt and divide onto 6 plates. Divide baguette slices and top with smoked salmon. Sprinkle with red onion and capers.
