French Toast Muffins

Ingredients:
2 1/4 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon cinnamon
1 1/4 cups milk
1/3 cup oil
1 (6 ounce) container yogurt
2 teaspoons maple extract
1/2 teaspoon vanilla extract
cinnamon, for sprinkling
powdered sugar, for sprinkling
Directions:
1. Preheat the oven to 350°F Lightly grease or line 12 muffins tins.
2. In a medium bowl, combine the flour, sugar, baking powder, salt, and cinnamon. In a large bowl, mix the milk, oil, yogurt, and extracts. Add the wet ingredients to the dry ingredients and mix.
3. Spoon the batter into the muffin tins until each cup is nearly full. Bake for 18 to 20 minutes until the muffins are lightly golden.
4. Let muffins cool in the tin for ten minutes, then transfer them to a baking rack to finish cooling. Sift powdered sugar and cinnamon on top of each muffin and serve warm.
