FRENCH QUARTER BEIGNETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Poe Estate in Justin, Texas in 1987.
Ingredients:
2 cups flour
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon ground cinnamon
2 eggs
1/4 cup granulated sugar
3/4 cup milk
1/2 teaspoon vanilla extract
oil for deep frying
confectioner’s sugar for coating
Directions:
1. To make dough sift flour, salt, baking powder and ground cinnamon into large mixing bowl.
2. Cover and set aside until required.
3. In a separate bowl beat together eggs, sugar, milk and vanilla extract.
4. Mix this into the flour mixture to form a dough.
5. Turn dough into a lightly floured surface and knead until smooth and elastic.
6. Roll out to a circle 1/4 thick.
7. Slice diagonally into diamonds about 3 long.
8. Heat oil in a deep fryer to 375 then fry beignets in oil a few at a time turning once.
9. Remove with slotted spoon and drain well on kitchen paper towels.
10. Before serving sprinkle beignets with confectioner’s sugar then serve warm.
