An herbed potato sald that's great with burgers or Bbq. From Everyday Food
Ingredients:
2-1/2lbs. fingerling or small new potatoes,halved(quartered if larger)
coarse salt and ground pepper
1/4c olive oil
3 tbs dijon mustard
2tbs sherry vinegar
1 small shallot,minced(2tbs)
3tbs chopped,fresh parsley
1tsp chopped fresh thyme
1/4 small red onion,sliced
Directions:
1. Place potatoes in large pot;cover with cold water by 1 ,season generously with salt. Bring to boil;reduce to simmer and cook till tender,about 15 mins. Run under cold water to cool slightly;drain.
2. Meanwhile in large bowl,whisk together oil,mustard,vinegar,shallot,parsley and thyme;season with salt and pepper. Add potatoes and onion and toss to combine. Serve at room temperature..
