French Onion Soup

An great, easy and tasty version of the old time french classic. Not sure where this family recipe came from, but believe me it tastes fantastic. You can use gruyer cheese or a sharp cheddar for this recipe. A pre-packaged beef stock from your local supermarket it a great shortcut for this recipe.
Ingredients:
6 medium onions, thinly sliced
1 tablespoon butter
2 tablespoons plain flour
6 cups beef stock
6 slices french bread (1cm thick)
1 cup grated gruyere cheese
salt
black pepper
Directions:
1. Gently cook onions and butter in a large pan for about 30 minutes, stirring occasionally making sure they do not burn. The onions should be soft and a rich golden colour.
2. Sprinkle in flour, stir well then add stock. Stir until boiling, lower the heat and simmer gently for about 20 minutes.
3. Place bread slices on a baking tray, bake in a moderate oven for about 10 minutes or until crisp.
4. Season soup to taste with salt and black pepper and pour into a soup tureen or into indivual bowls.
5. Top with bread slices, sprinkle with cheese and bake a further 10 minutes in a moderate oven.
