I love this recipe as it is quick and there is never any left overs. I generally make it when we have people over as a side dish even with a BBQ.
Ingredients:
6 large potaoes
250ml cream
1 large onion
2 pkts of french onion soup
2 cups of tasty cheese
salt and pepper to season
Directions:
1. Heat the oven on 180c. Peel potatoes and slice them as thin as possible about a one eight of an inch. I use a slicer that make the job a lot easier and quicker. put these aside. Peel the onion and slice exactly like the potatoes. Get a Foil tray (as I hate washing up) but you can make this in a caserole dishabout four to five inches deep. Spray the bottom with some Olive Oil spray, pour about 50mls of the cream on the bottom. Now start layering the caserole dish with potatoes first, then a layer of onions and genouresly sprinkle some french onion soup. Start again with the cream and potatoes, onions and the soup mix. You should be able to have about three layers. Finish on top with a fair bit of cheese (and sometimes I cover the chees with a layer of breadcrumbs mixed with some garlic) this gives the dish a totally different taste and a nice crusty top. Put in the oven and bake at 200c for about 20 to 30 minutes or until the poatoes are cooked. Enjoy
