French Lentil Salad

A creamy lentil salad that is incredibly high in fiber! Great served warm or cold.
Ingredients:
2 cups green lentils
2 1/2 cups water
1/2 tsp salt
1/4 tsp garlic powder
1/4 cup onion, diced
1/4 cup zucchini, diced
1/4 cup bell pepper, diced
1/4 cup carrot, diced
1/4 cup olive oil
1/8 cup red wine vinegar
1/4 tsp tarragon
1/4 tsp parsley
1 ounce soft goat cheese, crumbled
Directions:
1. Mix lentils, water, salt, and garlic powder, and bring to a boil. Reduce heat and simmer for 10 minutes.
2. Add vegetables and simmer another 15 minutes, until lentils are softened.
3. Mix olive oil, vinegar, tarragon and parsley in a bowl to form dressing. Toss lentils with dressing and add goat cheese.
4. Serve warm or cold.
