French Canadian Tourtiere Pie

A traditional French Canadian meat pie. Traditionally served on Christmas. This is an old family recipe.
Ingredients:
6 slices maple leaf bacon
1 lb ground lean pork
1/2 lb minced lean veal
1 small onion, finely chopped
1/2 cup water, boiling
1 garlic clove, minced
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/4 teaspoon celery salt
1/4 teaspoon sage
1 pinch ground cloves
1 cup mashed potatoes
1 double crust pie crust
Directions:
1. Cut Bacon into Small Pieces, fry until cooked but not crisp.
2. Add Pork, Veal and Onion.
3. Continue cooking until meat is lightly browned.
4. Add water and spices.
5. Reduce heat to simmer.
6. Cover pan and continue cooking for 45 minutes.
7. Combine meat mixture with mashed potatoes. Cool Slightly.
8. Roll our half of pastry and line a 9 pie plate.
9. Fill with meat.
10. Roll out remainder of dough and cover pie.
11. Seal a flute edge.
12. Slash top crust.
13. Bake in a 450 degree F oven for 10 to 12 minutes.
14. Reduce heat to 350 degrees F and bake 30 minutes longer.
15. Makes 5 to 6 servings.
