To avoid missing any of the Olympic sport coverage on television, try this fast-fry pork chop dish that can be eaten on table trays in front of the television.
Ingredients:
4 fast-fry boneless pork loin chops
1/2 teaspoon ground black pepper
1/2 cup crumbled feta cheese
1/2 bell pepper, roasted and thinly sliced (or1/4 cup bottled roasted peppers)
1/4 cup black bell pepper, pitted and roughly chopped (about 8)
8 -10 basil leaves, shredded
2 tablespoons extra virgin olive oil
1 tablespoon chopped garlic
1 tablespoon canola oil or 1 tablespoon other vegetable oil
Directions:
1. Preheat oven to 325°F Season pork chops with pepper and set aside.
2. In a mixing bowl, combine feta cheese, roasted red peppers, black olives, basil, olive oil and garlic. Toss to mix.
3. In a large oven-proof skillet over medium-high heat, heat canola oil; reduce heat to medium and add pork chops. Fry chops for 30 seconds on each side, just to brown.
4. Pile feta mixture evenly over 4 chops, covering them entirely. If you don't have an oven-proof skillet, place chops on a baking sheet. Place chops in oven and cook for 5 minutes or until pork is just cooked with a hint of pink inside.
