Francy Watermelon Salad With Whipped Cream Mayonna...

I was skeptical of this recipe when I obtained it from an estate sale a few years go. I had some watermelon leftover about 3 summers ago and decided to make this since it had my curiosity up. NOW, it is a regular request my house all summer long. Read more . Enjoy.
Ingredients:
1 medium ripe watermelon
1/4 cup powdered sugar
1 quart ginger ale
lettuce leaves
whipped cream mayonnaise
1/2 cup heavy cream
1 tablespoon powdered sugar
1/2 cup mayonnaise
2 tablespoons watermelon juice
1/4 teaspoon salt
1/4 teaspoon paprika
Directions:
1. Using a melon baller scoop out the pulp from watermelon.
2. Drain off juices and put pulp in a large bowl.
3. Sprinkle with sugar and cover with ginger ale then refrigerate 30 minutes.
4. Drain off liquid reserving 2 tablespoons.
5. Arrange the drained pulp in large lettuce leaf cups for individual servings or in a large leaf lined serving bowl for table service.
6. Top with a generous dollop of the whipped cream mayonnaise.
7. To make the mayonnaise in a small bowl whip cream until soft peaks form then stir in sugar.
8. In a medium bowl blend mayonnaise with reserved watermelon juice, salt and paprika.
9. Fold in whipped cream.
