A single quick bread mix that you divide and top four different ways. It is like an instant coffeecake buffet in one quarter of the time. A must make on the big Brunches. Really good to make for an open-house party. Read more . I'd use this as a go-to if I ever got to open a bed and breakfast!
Ingredients:
8 cups of sifted all purpose flour
4 tablespoons of double-acting all purpose baking powder
1 tablespoon of salt
2 cups of sugar
3 cups of milk
4 eggs
2 cups of melted butter

1/2 cup of brown sugar
1/2 cup of favorite chopped nuts
1 teaspoon of cinnamon
variation #2
1/2 cup of brown sugar
1 teaspoon of cinnamon
2 tablespoons of flour
2 tablespoons of butter
1/2 cup of chopped nuts
variation #3
2 cups of whole cranberries (you could use blueberries too)
2/3 cup sugar
pinch of salt
2 tablespoons of grated orange rind
2 tablespoons of orange juice
variation#4
1/2 cup of sugar
1/4 teaspoon of nutmeg
1/8 teaspoon of ginger
1/8 teaspoon of cinnamon
1/8 teaspoon of mace
2 cups of sliced peeled apples
Directions:
1. In a mixing bowl combine the flour, baking powder, salt and sugar.
2. Beat the milk with the eggs.
3. Stir liquid into flour mixture to make a lumpy batter.
4. Add the melted butter.
5. Divide batter into 4 greased 8 inch square baking pans (fixed each of four variations) and bake in a preheated 375 degree oven for 25 to 30 minutes until the breads test done.
6. Remove the pans from the oven.
7. Cool on racks.
8. When cool, wrap and freeze.
9. Reheat in a moderate oven at 350 degrees for 10 minutes. Serve warm.
10. Variation #1 Cinnamon Nut Bread
11. Sprinkle the batter in the greased pan with the brown sugar, cinnamon and nuts. Proceed as directed above.
12. Variation #2 Struesel Bread
13. Sprinkle the batter with the brown sugar MIXED with the cinnamon, flour, butter and nuts. Proceed as directed.
14. Variation #3 Cranberry Bread
15. Bring to a boil the cranberries sugar salt orange rind and juice.
16. Simmer for five minutes. Turn mixture into the bottom of a greased 8 inch square pan. Pour one quarter of the batter over the cranberries and bake. Turn out, cranberry side up to cool.
17. Variation #4 Apple Bread: Generously butter an 8 inch cake pan. Sprinkle the bottom with1/2 cup of sugar. Toss the apples with the spices, stir well and cover the bottom of the cake pan with the apples. Pour one quarter of the batter over the apples and bake. Turn out, apple side up to cool.
