Four Bean Chilli

Adapted from a 2007 edition of Australian Good Taste
Ingredients:
2 teaspoons olive oil
2 celery ribs, finely chopped
1 red onion, finely chopped
2 garlic cloves, crushed
1/2-1 teaspoon ground chili powder, depending on taste
2 (400 g) cans chopped tomatoes
2 (400 g) cans four-bean mix
1 tablespoon lime juice
sour cream, to serve
chopped coriander, to serve
Directions:
1. Heat oil, cook celery and onion.
2. Cook about 6 minutes till soft.
3. Add garlic and chilli, cook 2 minutes.
4. Add tomatoes and beans, bring to boil.
5. Simmer 20 minutes, add lime juice.
6. Add salt and pepper to taste.
7. Serve with sour cream and chopped coriander on top.
