Broccolli, Mushrooms, and Shallots in a white wine/goat cheese sauce over rice.
Ingredients:
2 cups chicken broth
2 cups cooking wine
5 tbs flour
2 tbs butter
2 cups broccoli, chopped
2 tbs olive oil
1/2 cup cashews
2 cups mushrooms, pieces
150 g shallots
4 cloves garlic
2 oz goat cheese
2 cups jasmine rice, uncooked
Directions:
1. Cook jasmine rice in rice cooker.
2. Add wine, goat cheese, flour, and broth to a pan, heat on low.
3. Saute oil, butter, onions, garlic.
4. Once onions are transparent, add mushrooms and cashews, cook until brown - add broccoli for the last few minutes.
5. Add Flour mixture to veggies, let simmer til thickened... cook until broccoli is tender (to taste) and has absorbed the wine/cheese flavor.
6. Mix in rice from cooker into sauce, the enjoy :)
