Make your own fortune cookies! It's fun and easy. You can personalize the fortunes for your company and the occasion, although I've included some suggestions below. I like the fortunes listed with the recipe, they're so cliche, that they're funny. Read more . Enjoy!
Ingredients:
36 - 1/2 x 2 1/2 inch strips of paper for fortunes
3 egg whites
1/4 c. granulated sugar
1/8 tsp. salt
1/2 c. butter or margarine
1/2 c. all-purpose flour
2 tsp. almond extract

Directions:
1. Write fortunes on strips of paper and fold in half; set aside. You can also use your computer and trim them down to size.
2. Preheat the oven to 350 degrees F. Beat egg whites until frothy. Beat in sugar and salt. Stir in butter, flour, and almond extract.
3. Making no more than six cookies at a time, drop batter by rounded teaspoonfuls onto ungreased baking sheet about 3 inches apart. Bake 8 to 10 minutes or until edges are light golden brown.
4. Working quickly, while cookies are still warm and pliable, hold each cookie in palm and place a fortune on one half of cookie. Fold cookie in half over fortune. Drape the center of the folded cookie over the handle of a wooden spoon. Fold the edges of the cookie around spoon until sides touch; slide off spoon. Repeat with remaining cookies.
5. If cookies become brittle before they're shaped, return the pan to the oven for 1 minute to soften. Store in airtight container.
