Most fortune cookie recipes I come across have butter and/or milk in them in some way. Since dairy isn't in the typical chinese restaurant (especially one in LA in the 20s, which is where the fortune cookie came from), This one should be most authentic, as much as a fortune cookie can be.
Ingredients:
2 c flour
2 tablespoons cornstarch
1/2 c sugar
1/2 teaspoons salt
2 egg whites
1/2 c vegetable oil
1 teaspoon water
2 teaspoons vanilla extract
...and of course 20 fortunes.
Directions:
1. Preheat oven to 300.
2. Sift together the flour, cornstarch, sugar, and salt.
3. Stir in the oil, eggwhites, water, and vanilla.
4. On a well-greased sheet, roll a very thin 4 inch circle.
5. Cook for 15 minutes.
6. If you cook more than one cookie at a time, leave the flat circles in the oven as you fold.
7. Wear cotton gloves, and take each cookie out.
8. Hold fortune in the center of the cookie, and fold in half.
9. Fold in half again, using the edge of a muffin tin to help, and place points down in the muffin cup to hold in place as it cools.
10. If the cookie hardens too quickly, put it back in the oven to soften.
