From a Giant Food recipe card, these look really cool. They say to write messages on small strips of paper but I'd suggest using a clean sheet of typed paper from a laser printer- not ink-jet because those smear and could cause ink poisoning, as could hand-written ones. Copied ingredient list as-is.
Ingredients:
1/4 cup all-purpose flour, sifted
2 tablespoons granulated sugar
1 tablespoon cornstarch
2 tablespoons canola oil
1 egg white
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons water
Directions:
1. In a small bowl, stir together the flour, sugar, and cornstarch. then add the oil, egg white, and extracts and stir until the mixture is smooth.
2. Add the water and mix thoroughly- make one cookie at a time with the following directions.
3. Lightly oil a non-stick skillet or crepe pan. Pour on 1 tablespoon of batter and spread to a 3 1/2 circle.
4. Cook over medium-low heat until the edges begin to turn light brown, about 2 minutes.
5. Turn with spatula and cook 2 more minutes- it's important to use a timer for this to cook the entire 4 minutes so that the cookies become brittle when cool.
6. Working quickly, place cookie, smooth surface down, on a paper towel.
7. Put the fortune pape in the center, bring up edges and pinch together using paper towel (cookie will still be hot.).
8. Stand the area of the fold over the rim of a bowl and gently pull the points downward, holding the edges closed.
9. Place formed cookie in muffin pan or small cup to cool.
10. Repeat the process for the remaining cookies.
