This is another recipe that I've been making forever and have baked it for many a holiday, baptism's, birthdays, showers, barbecues, name it - it's been there like a guest. I love when peaches are in season because it makes for a great dessert. But more often than not I use canned peaches (when peaches are not in season) in place of the fresh. These are refreshing with it's cake layer on the bottom and cheesecake layer on the top. It's not a heavy, weight-you-down dessert but a refreshing one. Hope you enjoy it.
Ingredients:
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup butter (make sure it's cold, cut into bits)
4 large eggs
16 ounces cream cheese, softened
1 tablespoon sugar
2 teaspoons vanilla extract
2 large eggs, at room temperature
2 teaspoons fresh lemon juice
2 tablespoons all-purpose flour
1/4 teaspoon salt
4 fresh peaches or 4 equivalent canned peaches
1 tablespoon sugar
Directions:
1. Cake Layer:.
2. Into a bowl, sift together the flour, sugar, baking powder, and salt.
3. Add the butter, combining the mixture until it resembles coarse meal.
4. Add the egg, blend the mixture well and spread it onto the bottom of a 13 x 9 x 2 baking pan.
5. Cheese Layer:.
6. In a bowl with an electric mixer. Beat together the cream cheese, 4 tablespoons of sugar, and vanilla until the mixture is combined well.
7. Add the eggs, lemon juice, flour, and salt; beat the mixture until it is smooth.
8. Spread mixture evenly over the cake batter.
9. Slice the peaches thin; arrange them in one layer on top of cheese/layer.
10. Sprinkle top with 3 tablespoon sugar.
11. Bake in a preheated 350 degrees fahrenheit oven for 20 - 30 minutes or until just golden.
12. Sprinkle cheesecake with remaining 1 tablespoons sugar.
13. Let cool, cut into bars.
