Quick and easy basic savory corn muffin.
Ingredients:
2 cups yellow cornmeal
1 cup unbleached white flour
3 tablespoons sugar
1/2 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons extra virgin olive oil
3 tablespoons canola oil
1 3/4 skim milk (or buttermilk)
2 large eggs
cooking spray or oil for muffin tin
Directions:
1. Preheat oven to 425 degrees Fahrenheit
2. Spray cooking spray or oil on 12-muffin tin and set aside. If you use paper muffin cups, you'll still have to spray or oil the cups too.
3. Using metal blade in food processor, add dry ingredients to the bowl [corn meal, flours,sugar, salt, baking powder, baking soda].
4. Process for 10 to 15 seconds.
5. Add wet ingredients to the bowl [oils, milk and eggs].
6. Process for 10-15 seconds, scraping sides of bowl as necessary.
7. Scoop into prepared muffin tin.
8. Bake for 15 to 20 min depending on your oven.
