Ingredients:
6 large eggs
1/2 cup grated fontina cheese
1 1/2 tbsp olive oil, divided
3 cups green or yellow squash, sliced
1/4 tsp red pepper flakes
1 clove garlic, sliced
Directions:
1. Heat garlic, 1 tbsp oil, and red pepper flakes in a large saute pan over medium heat for 2 to 3 minutes. Add squash and salt to taste. Toss to coat. Cover, reduce heat to medium-low and cook for 30 minutes stirring occasionally.
2. Uncover and increase heat to medium. Coat 10 minutes more until liquid is almost gone.
3. Preheat broiler. Position rack second from top.
4. Beat eggs in a large bowl. Fold in cheese and squash mixture.
5. Heat remaining oil in a medium, non-stick, broiler safe pan. Add egg mixture and cook 3 minutes to set bottom. Reduce heat to medium-low and cook 3 to 5 minutes, lifting edges occasionally and titling pan to uncooked egg mixture flows to the bottom.
6. Broil 3 to 4 minutes or until frittata is browned and set. Serve warm.
